Macaron 17: Macaron For The New Year

Week 17 December 28
Macaron 17. Raspberry Macaron with Champagne Mousse. A macaron fit for the new year. Like drinking chambord in champagne. I am really fascinated by the mousse. It is very very rich and has a slight alcoholic taste. Champagne is my favorite alcoholic beverage and how can you beat raspberries. The macaron color is also perfect! I love this macaron, a holiday must!

Macaron 16: Vanilla Bean and Balsamic Cream with Strawberry Balsamic Buttercream

Week 16 December 21
Macaron 16 Vanilla Bean and Balsamic Cream with strawberry balsamic buttercream. A break from all the chocolaty treats this month. I wanted to slice a strawberry and add it to the middle but I did not have any so I decided to dust them with pretty gold dust. I love sparkle and I do love macarons so why not let them be friends. These treats are tangy and sweet and all around delicious.

Macaron 15 Chocolate with Mint Macarpone. If there is any time of the year that calls for an over abundant amount of chocolate, now is the time. I know last week was also chocolate, but I felt that since its the holiday and chocolate is the quintessential over indulgent treat why not over indulge. This is is like an Andes Mint. Creamy and minty and I just adore mascarpone. Quite delish and I like the colors together.

Macaron 14 Chocolate macaron with Egg Nog Buttercream. Egg Nog is Christmas in a cup. I have to have it every year. Now, I have never had real egg nog ,just the good old grocery store kind. It is to good. So my thought, why not make a tasty chocolate macaron and make some creamy delicious egg nog buttercream. The outcome was just has wonderful as I had dreamed! Thus the first of the Holiday Macarons!

Macaron 13: Earl Grey with Lemon Curd Mascarpone

November 30 Week 13
Macaron 13 Earl Grey with Lemon Curd Mascarpone. This is what love tastes like. Grey and yellow is one of my favorite color combinations. Since they are no rules for macarons I created this color and taste combination. Early Grey is my favorite tea and and I adore anything and everything lemon and grapefruit. By far one of my most favorite creations so far. I made the lemon curd from scratch and that was divine. Even warm, I sort of wanted to eat it like soup. I added some mascarpone which separted a little from the lemon. Dairy and lemon never mix well for me but, the filling was perfect, lemony mascarpone. Bliss.

Macaron 12: Chocolate with Lemon and Quince Buttercream

Macaron 12 Chocolate with Lemon and Quince Buttercream. This macaron is a little different. I purchased quince paste a while ago in a small Jerusalem grocery store and was just waiting to use it.The quince paste was sweet not tart and the color is beautiful. The lemon was an added after thought and worked quite well.

Macaron 11:Vanilla with Rose Buttecream

Macaron 11: Vanilla with Rose Buttercream. Well I have finally perfected the macaron. This is it. I could stop the blog that ,is how good this batch were. I have reached perfection and the giddiness that took over me was too much. I could not contain myself. Perfect. Good shiny tops, good feet, and no hollow middles. Perfect chewiness. I am in love. The rose water buttercream was a bit of heaven too. I used a new buttercream recipe and it was so smooth and just a small hint of rose lingered. Wonderful.

Macaron 10: Chocolate with Peanut Butter Cocoa Nib Buttercream

November 9 Week 10
Macaron 10: Chocolate Macaron with Peanut Butter and Cocoa Nib Buttercream. I have been in such a chocolate mood this week, I felt that it was time for the chocolate macaron to make an appearance. Yesterday I had brunch at this restaurant and the waffle of the day was a plain waffle with spiced apples and peanut butter whipped cream. Yum. I have had my mind on peanut butter ever since. The nibs add a nice crunch to the buttercream and it's nice and light and delicious.

Macaron 9: Raspberry Macaron with Lime Curd Buttercream

November 2 Week 9
Macaron 9 Raspberry macaron with lime curd buttecream. A nice burst of color, I love the pink and green contrast. They are the perfect girly macaron, but then again they all are? I used yet another recipe and I think I am happy with how they turned out. I did not have my piping bag so I hade to use a ziploc which did not do a great job. Oh well, they still tasted delish!

Macaron 8 Chocolate Macaron with Bacon Maple Buttercream. A new approach to the macaron. Inspired by the Vosges Bacon Chocolate Bar. It was delicious, like breakfast when the bacon touches your waffle. Sweet, salty and wonderful!

Macaron 7: Amaretto with Peach Amaretto Buttercream

October 19 Week 7
Macaron 7: Amaretto with Peach Amaretto Buttercream. So I tried a new recipe this week and I am not going to lie, it did not turn out as well as I would have like. I felt like I was a complete failure, then I realized it is only week 7 and I still have 45 weeks left to perfect. What a relief. Now, the inside of the macarons turned out great. Crunchy and chewy,but I never got any feet. I dusted them with a little cinnamon and over all the taste was good, appearance not so great. We will try again next week!

Macaron 6: Little Black Macaron

October 12 Week 6
Macaron 6: Little Black Macaron. Last week I delivered an order of chocolate macarons to Little Black Dress on Cherry Street. I chatted with the ever so delightful owner Kelly for a little and left inspired to make a signature macron for the store. What I came up with this, a chocolate macaron with sea salt sprinkled on top, and for the filling caramel buttercream with caramel drizzled inside and on top. A messy, but oh so delightful macaron. The salt was delicious and actually paired nicely with the chocolate and caramel. Soon to be classic I am sure. Other exciting news is that I am starting an Etsy page just for my macarons. They will never be more than a click away!!!

Macaron 5: Vanilla Bean with Cassis Buttercream

October 5, Week 5
Macaron 5: Vanilla Bean with Cassis Buttercream. So I wanted to make a purple macaron, purple is so pretty in cookie form and I had some black currant puree and I love the macarons that have matching filling so I went for it. These were wonderful, the vanilla was subtle and the buttercream was sweet with a light taste of black currant. I think these are some of the prettiest so far. I know my pictures are not the best, but I think they are getting better!

Macaron 4: Orange with Bittersweet Chocolate Ganache

September 28, Week 4
Macaron 4: Orange with bittersweet Chocolate Ganache. I am tired of chocolate and brown colored macarons. I need some color, so I made these beautiful orange colored and flavored one. I ground the almond flour to an espresso fine powdered and then sifted it. Now the flour is like angel dust. This developed nice feet but it seems that maybe the orange extract made them hollow inside. This batch was really, really fragile. I used a different recipe, that I will not be trying again. The ganache is really good. I have been just eating that alone. Nice and milky not all the way smooth, there are little bits of chocolate bits that are delicious!

Macaron 3: Chocolate with blood orange buttercream. Its like its a chocolate orange. A perfect combination. Not going to lie, I cooked them a little to long, so they were crunchy, but I paired them with some Pot de Cremes so it worked as a cookie biscuit.

Macaron 2: Absolutely delectable, chewy and soft and crunchy. I used instant espresso powder and for the buttercream a little coffee extract from Nielson Massey. Good not bitter. A great base recipe.

Macaron 1: Cinnamon with Pumpkin Cream
The most perfect fall macaron. A nice spicy cinnamon macaron with the most delicious pumpkin cream. The cream is laced with cloves and there is a little cream cheese mixed in. It is a little bit more runny than a buttercream and when sandwiched is drips just a little making it a lovely chewy and crunchy sandwich.
